Kale and Watermelon Salad is a featured salad for our Tasty Thursday program and it is a WINNER! We have been dishing this up to children in Pennsylvania parks for 3 years now and it never disappoints. - 1 bunch of kale
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- ½ tsp. salt or taste
- Juice of a lemon
- 1 garlic cloves, crushed
- 3 cups watermelon, diced
- Allow the child to de-stem the kale leaves and rip the kale leaves into bite size pieces.
- Mix the kale, olive oil, garlic, vinegar, salt, and lemon juice in a mixing bowl for roughly 2 minutes.
- Mix kale and watermelon.
