Easy Homemade Mayonnaise & Fun Variations
Take your egg salad, chicken salad, deviled eggs, and sandwiches to a new level with this Easy Homemade Mayonnaise recipe. I love making homemade mayonnaise because I can pick and choose the oils. This recipe uses a combination of safflower and olive oil but I have also been known to use avocado oil.
Fun Mayonnaise Variations
Combine 1 cup mayonnaise and 2-4 cloves mined garlic in food processor and pulse until combined.
Roasted Red Pepper Mayo
Add 1/2 cup roasted red peppers, 2 cloves of garlic, and 1 cup mayonnaise to a food processor until smooth.
Add 1/4 cup drained horseradish and 1 gbps. Dijon mustard to 1 cup mayonnaise and whisk until combined.
Spicy Garlic-Chili Mayo
Whisk together 1 cup mayonnaise, 2 cloves garlic, and 3 tbsp. of an Asian chile sauce until combines.

- 2 large egg yolk
- 4 tsp. fresh lemon juice
- 1 Tbsp. white wine vinegar
- 1 tsp Dijon mustard
- 1 tsp. salt
- 1.5 cup safflower oil
- 3/4 cup olive oil
- Combine egg yolk, lemon juice, vinegar, mustard, and salt in medium bowl. Whisk until blended and bright yellow, about 30 seconds.
- Add the olive oil a few drops at a time while continuously whisking until the liquid seems to thicken and lighten a bit.
- In thin stream, slowly add the remaining olive oil & safflower oil. Continue to whisk constantly until mayonnaise is thick for about 8 minutes.
- Cover and chill.
If you have a standing mixing, use instead of a whisk. Your arm will thank you for it!
